Yummmmmmy, the holidays are coming and that means FOOD. Everyone loves good food and there is never a better time than Thanksgiving and Christmas to bring out the best of the cooks. Even those people who hate to cook, cook at this time of the year.
Pumpkin pie is the traditional favorite but today a new recipe will debut for your eating enjoyment - BRANDIED PUMPKIN CHEESECAKE. But before running to the kitchen and putting this one together here are a few fun cheesecake facts:

Cream cheese is usually the main ingredient in cheese cake. It can be made with several other cheeses - Limburger being the exception here.
What makes New York style cheesecakes coveted above others is that they are rich, dense, thick, creamy and plain. Might not have a crust but if it does, it is to be only a thin layer of graham cracker crumbs.
Crusts are made from graham cracker crumbs mixed with butter - some can be made from crushed Corn Flakes, crushed cookies with butter, ginger snaps, Oreos - whatever.
BRANDIED PUMPKIN CHEESECAKE
Crust: 1 ½ C graham cracker crumbs; ½ C butter or margarine, melted; 1/8 C Stevia (sugar substitute.
Filling: 2 (250 g) cream cheese @ room temperature; 1 (125 g) cream cheese @ room temperature; 1/4 T. Stevia; 4 medium eggs; 1 (14 oz) can pumpkin without spices; 2 ½ tsp. ginger; 1 T. cinnamon; ½ tsp. nutmeg; 1/4 tsp. cloves; 1/3 C brandy; whipped lite-cream; preserved ginger.
For crust, combine crumbs, sugar and butter in a bowl and mix well. Press crumb mixture firmly into bottom of 10 inch spring form pan and 2 inches up sides. Bake in moderate oven, 350 degrees for 10 minutes.
For filling, beat together cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition until smooth and creamy. Add pumpkin, ginger, cinnamon, nutmeg, cloves and brandy and mix until well blended. Pour cheese mixture into crust and bake in slow oven, 325 degrees, for 50-60 minutes, or until well risen.
